Wow your friends and family with this easy to prepare liver pate’.  Great for parties and family gatherings.


  • 8 ounces chicken liver
  • 8 tbl. Butter
  • 2 med. Shallots
  • 2 cloves garlic finely minced
  • 1 tbl. Thyme
  • 1/3 cup port
  • 3 tbl. Heavy cream
  • Kosher salt to taste

Step 1: Melt  4 tbl. Butter, add shallots, sauté until translucent.  Add in liver, garlic, thyme and port.  Bring to high heat, cook approximately 5 minutes.  Liver should be brown, still soft and pink inside.

Step 2: Remove and place in blender with the rest of butter and cream.  Puree’- taste adjust seasoning, add salt if desired.

Step 3: Pack into glass jars, seal and refrigerate.  Serve chilled on toast points or crackers.

Store up to 5 days in refrigerator or freeze.
